Flat top griddle
Before you start cooking
- Griddle cooking tools are located in the top cabinet left of the fridge. You’ll need some spatulas, a scraper and squeeze bottles along with any other cooking tools like tongs, paper towels, etc.
- The grease trap is located under the grill, just slide it out using the handle. If grease trap is full you can empty it when it is COOL and reuse the aluminum liner.
Operating the flat top
1. Turn on griddle by flipping the switch on the back (should light up when on)
2. Open griddle top (top should remain open when in use, do not cook with lid closed). Please make sure to close the top when not in use to protect against debris and rain
3. Turn on propane gas and turn knobs to the flame symbol. There is an extra propane tank in the pool shed if needed.
4. Press the igniter and you should hear the gas catch fire and an orange light will illuminate above each knob
5. Let griddle preheat before cooking (this makes sure food doesn’t stick to the surface). There is an infrared temperature reader on the shelf behind the shed door.
6. Cook using desired heat setting (do not close lid while cooking).
7. Once you’ve finished your meal, please remove all remaining food from the grill and then scrape off all scraps into the grease trap. It helps if the griddle is still hot so you can turn the burners back on for this.
8. Once surface scraps and grease are removed, please use squeeze bottle with water to soak the surface and wipe clean with a paper towel (use tongs as the surface will still be hot). Burners should be off at this time but the surface still hot. Do not leave any water sitting on the grill or the cast iron will rust.
9. When the surface is clean and dry, wipe a light coat of oil onto the grill so it is ready for your next cook.

Grill
The grill is connected to a natural gas supply line (no propane needed). Grill has 4 burner zones, a rear infrared zone and a side infrared sear station. Do not leave grill unattended!
To use grill.
1) Depress and turn knob until you hear a click and see the burner flame on. Do not turn on side and rear burners (smaller knobs) when not intending to use those stations (you can overheat and melt/burn part of the grill).
2) Once on, you can let go and set desired temperature (knob should light up red).
3) To turn off a burner, rotate clockwise and depress to turn fully to the off position (flame icon pointing up and knob should return to off/blue).
4) Please turn all knobs to off position when not in use as well as the lights. Use the provided scraper and brush to clean up after each use. When grill is fully cooled, please keep covered.
The side infrared station can be used as a side burner for pots and pans, or as a sear station for steaks. To use the side station, turn knob and use the electric igniter to start. The grates in the lower position is for pots/pans and raised is for searing.
Wood fire pit
Logs in firewood shed are provided for outdoor use only. Only seasoned logs can be used indoors and purchased from any local market, grocery store, gas station, 7/11 or Home Depot. Do not leave fire unattended and leave all coals/ash in the fire pit (do not dispose in trash or on lawn). Feel free to use provided welders gloves under grill and return after use.
